How to say things which is more than 2

When you want to have a pen, you say "a" pen.

When you want to have the one and only special pen everyone is talking about, you say "the pen"

When you want to have 2 pens, you say pens

This rule applys on nearly everything like "apples" and "dogs".

But things which cannot be counted such as water, you cannot say "warters"(YOU CANNOT SAY)

I mean you can't "count" water right???
